Fall is my favorite time of year. We decorate the first day of September for all things fall and halloween. My kids enjoy picking out their costumes and reading all the fall books. My favorite part of fall are all the specialty food items on every restaurant in town–especially the pumpkin dishes. I’ve recently found a favorite at a local juice/smoothie place, and although I would love to go daily my wallet just isn’t loving that idea. I’ve solved the problem, and I’ve created my own pumpkin smoothie with just a few ingredients that you probably already have on hand!
This smoothie has become part of my everyday routine–but to make it easier I prep this for the week in plastic ziploc bags so all I have to do is pour the milk in. This makes for an easy breakfast when you’re on the go.
If making ahead stir the pumpkin puree, maple syrup and pumpkin pie spice together and scoop into a ziploc bag. If you want this to be a little more filling throw in a 1/2 cup of sweet potato the taste will be very similar and will leave you feeling full longer.
Pumpkin Pie Smoothie Bowl
Ingredients:
3/4 cup Pumpkin Puree
1/2 cup Oat Milk
3 tbsp Maple Syrup
2 tsp Pumpkin Pie Spice
1/2 cup Ice Cubes
Toppings:
1/2 of a Banana
Sprinkle of Granola
Sprinkle of Coconut Chips
