Ya’ll don’t hate me I’m a pregnant woman who loves all things pumpkin (even when I’m not pregnant.) Seriously, since the first of the month I’ve been craving it in my life. I woke up this morning wanting some oatmeal–and guess what? Yep, Pumpkin Pie Oatmeal was the chosen one. First of all, for me to crave oatmeal is one thing–to stand at a stove and make it at 6:45AM is another thing to be proud of!
We are really busy this week so I’m not meal planning for the next 2 weeks. Instead I am giving you some delicious oatmeal recipes I do use when I make oatmeal. Including this new Pumpkin Pie Oatmeal that I mixed up today.
Menu Plan Monday: Oatmeal
What You Need:
1/2 Cup Oatmeal
3/4 Cup Almond Milk or Regular Milk
1/8 teaspoon of Pumpkin Pie Spice
1/2 teaspoon of Vanilla Extract

1. Mix oatmeal and milk together in a small saucepan over medium heat.
2. Let simmer for about 3 minutes, or desired thickness.
3. Stir in Pumpkin Pie Spice, Vanilla, and Pumpkin Puree.
