Finally Friday!

I know I’ve said before—but I love Fridays! I love spending the weekend as a family and just relaxing. It seems like we are always on the go during the week, which is fine because I’m not one to stay cooped up in the house. This was our first week off of school and I’m remembering what it’s like to be a stay at home mom again. 

It’s hot ya’ll. Summer is officially here and although I’m only 13 weeks pregnant–I feel 200 times hotter then any given day. We’ve been living in the pool, splash pads, and Adventure Island. Thank the good Lord in heaven I have a fish as a son because if not we’d be cooped up in side all summer. Oh–and I’m all about the aquarium. Indoors where its cool, shaded splash pad, and lunch on the water. Win, win, winning! 

So I’m not lazy–just running out of ideas. This is where Plated. comes in. You know when you’re scrolling on FB and all these ads just capture you in and you end up getting something…that’s Plated. Except I did my research, because I really wanted food that I would actually eat. I had tried another company before and wasn’t a fan of really anything they sent. Plated. kinda sounds delicious, plus you can choose your own meals! We are sticking to the 2 a week with a dessert. Because this mama loves dessert with her meal. 

I love summer because it’s always been a time of beachin’, vacations, amusement parks–this summer is definitely not falling short of that. We have a fun trip planned in a few weeks to St. Augustine with my mom and siblings. Once I finish the laundry from that trip Sometime after we return, we are heading on a road trip to Jacksonville to see my cousins and their sweet babes. Then it’s off to Sesame Place where we will spend a few days, then back down to Florida with a pit stop at St. Simon’s island! A few weeks later we will be heading to Anna Maria where we will spend more time with my mom and sibs and have some updated family pics at one of our favorite vacation spots. 

13 weeks today. 
Which means 13 days until we find out if it’s a boy or a girl?

Before our Adventure Island excursion today I asked a friend to meet me at the park for some playtime. But before that even happened I decided I needed donuts in my life for donut day. Like you need an excuse for donuts. So this mama drove to Publix got a half dozen and some chocolate milk and happily ate one while my son splashed in all the puddles at the park.

Whip up a plate of goodness with this Veal Piccata Whip up a plate of goodness with this Veal Piccata Recipe! 🍋✨ Light, flavorful, and oh-so-satisfying. 
Here’s how: Ingredients: 
- Lean veal cutlets 
- 2 TBSP. Olive oil 
- 4 TBSP. Butter 
- 1/4 Cup Fresh lemon juice 
- 1/4 Cup Capers 
- 4 Cloves Garlic 
- 1/2 Cup White Cooking Wine 
- 1/2 Cup Chicken Bone Broth 
- Salt and pepper, to taste 
1️⃣ Season veal with salt and pepper. 
2️⃣ Sear in olive oil until golden, then set aside, cover with aluminum foil
3️⃣ In the same pan, melt butter and sauté garlic and capers.
4️⃣ Pour in lemon juice, chicken broth, and white wine reduce. 
6️⃣ Plate, and drizzle that savory sauce. 
7️⃣ Dive in and enjoy the flavors of a classic made healthy!
Next time you get ready to potty train don’t let Next time you get ready to potty train don’t let ANYONE tell you that one gender is easier than the other. Kids are kids and they each have their own personality. My daughter is very much into doing things herself without help—so potty training had to be done by her not the experts (myself). I used the same potty training technique that I used with the boys, and it did take a bit longer for her to get it—but that’s because she took what I told her to do and did her own thing. 🤣 The next big step? Moving to a big girl bed. I’m not ready. 😭
Ok smoothie, ice cream—it’s all the same thing Ok smoothie, ice cream—it’s all the same thing. Elevate your @corepower drink by using the @ninjakitchen Creami. To prep my ice cream I pour my drink into the container the night before with some bananas. The next morning it’s ready, I mix it twice on lite ice cream. If it seems like it’s not mixing well just add a splash of milk. I typically like to add Lilly’s Chocolate Chips, but they were missing so I found the marshmallows and said whatever and threw some in. I then mixed it on “mix in” and it seriously tastes like a frosty. It is delicious!
