Blueberry Avocado Muffins

Just a few weeks ago I introduced Bennett to blueberries, since then he wants them whenever he sees the container come out of the fridge. If I allowed him, he would eat just that for breakfast, lunch, and dinner. The same goes for avocado, if he sees me pull out an avocado he will stop what he is eating and only want that. Oh, he also likes bread. Is there anything he doesn't like? 

That being said, I love blueberry muffins! With some sugar crumble on top, a hot cup of coffee, and some cinnamon butter. I wanted to use what I had left from the blueberries, and my soon to be bad avocados. So I whipped up some blueberry muffins. Instead of sugar, I substituted applesauce. This makes them a lot healthier then the blueberry muffin you would make yourself. The good thing about toddlers? They don't know what the good stuff tastes like yet! I will forewarn you, Bennett inhaled these. Me? I will stick to my muffins with the calories good stuff please. 

Bennett's Blueberry Avocado Muffins 

2 cups whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 ripe avocado, seeded and peeled
1/2 cup applesauce
1 egg
1 tsp vanilla extract
1/2 tsp cinnamon
1 YoBaby yogurt any flavor 
1 pint organic blueberries

Heat oven to 375 and spray or use a nonstick mini muffin tin.

In a bowl stir flour, baking powder, baking soda, and salt.

Place avocado and applesauce in your mixer and beat until smooth and creamy.

Add in the egg. Add the vanilla, yogurt, and cinnamon and mix well. 

Pour in the flour mixture a little at a time mixing until all is combined. Fold in the blueberries. Using a small spoon, spoon mix into muffin tin. 

Bake for 15 minutes, or until a toothpick comes out clean. After 5 minutes, take out and cool on cooling rack.

After completely cool, store in freezer in a gallon freezer bag or freezer safe container.

My Favorite Things: Sippy Cups for All

If you live where it is hot in the summer...like I mean hot. You know that you must carry a water bottle on you at all times. I need to drink as much water as possible, or I get terrible headaches. I know when I haven't drank enough because by the end of the day,  my head feels as if it might burst. I've gotten used to taking one with me and having one for Bennett as well. When my hubby goes to his softball games he always takes about 64 oz of water with him. (That's more camel status to me, but hey more power to him to drink that much). These are the "sippy cups" I am loving right now. 

1. Bennett- Nuby cups

Just recently we started the Nuby cups. The Munchkin ones seem to be just a little small for my growing boy, and the 8 oz cup that Nuby offered is perfect! We use the sippy cup for his 11AM and 3PM milk, and he drinks a water/juice combo at lunch and dinner. We always bring his cup along anywhere we go so that he can keep hydrated in the summer heat. 

I wrote about this cup a few months ago right before I purchased it. It is by far my favorite cup for myself. I love that the fruit is contained in a little container so that I can easily switch the fruit out during the day, and I also love that it's glass. I do wish it stayed colder a lot longer but I think I would have to forgo the glass if I wanted insulated. Oh well, I just need to drink my water faster. ;) 

Nic brings about 64 oz of water with him to his softball games. I'm loving this water bottle for him since its insulated and holds all the water he drinks. This would also be great for the beach or Adventure Island so that we don't have to bring a huge cooler. 

4. Ours- Bottle Brush

I would say this is more my favorite, but hey...we all do dishes right? Have you ever tried to stick your had into a water bottle to wash it? It's impossible, you end up getting your fist stuck. I love water bottle cleaners, and this one has all the extra cleaning parts attached to it for you!

Macaroni Cups

I wouldn't say I have a particularly picky son. He eats almost anything I put in front of him, and loves almost all food--with the exception of a turkey burger. There are days however, that he is like his mama and has decided that he doesn't want a food that was served. This is where these delicious mac and cheese cups comes in. He would eat macaroni and cheese everyday if I made it. (Maybe it's from all of the macaroni I ate when I was pregnant?!) Anyways, I have so many frozen cubed veggies leftover from our puree days not too long ago, so I defrosted and threw them in a pot of mac and cheese. This one I made has about a 1/2 cup of Kale and Zucchini or 4 cubes. Without further ado, here is the recipe. 

You can use any kind of macaroni product, but I love the little Ditalini pasta that Simply Balanced sells. 

Cook up your Macaroni about 3 minutes less then what the package says. While your Macaroni is cooking, defrost your veggie cubes and mix with the milk. In a large pot melt the butter and then whisk in the flour. Whisking for 2-3 minutes over low-medium heat. Mix in the milk mixture, whisking occasionally until it is brought to a boil. Once at a boil, place on simmer for about 3-4 minutes or sauce is thickened. Add cheese, and stir until melted then add in the pasta. 

Take spoonfuls and place in a mini muffin pan and bake on 375 for 10 minutes or cheese is bubbling. If you are using regular muffin tins for your "big kids" I would heat for 15 minutes or until cheese is bubbling. 

Macaroni Cups

  • 1 pound Ditalini pasta (Or any other macaroni type pasta)
  • 3 cups whole milk
  • 4 cubes of your favorite frozen veggies (or 1/2 cup of your favorite veggies--blended to make a puree)
  • 3 tablespoons unsalted butter
  • 2 tablespoons flour
  • 4 cups cheese (I used a mixture of cheddar and mozzarella)

Let's Cook!

1. Preheat oven to 350° F.

  1. 2. Cook the Ditalini for about 3 minutes less than that the package says. Strain.
  2. 3. While the pasta is cooking. Defrost your veggie cubes and place in the milk.

  6. 7. Transfer by spoonfuls to a mini muffin pan and bake for 10 minutes or until cheese is bubbly. If you are using a regular muffin pan, bake for 15 minutes or until cheese is bubbly.

Welcome back to another week of Menu Plan Monday! This week is a short one as my husband and I get to go on mini vacation for our anniversary!! Yesterday was Father's Day, and I asked my husband what he wanted me to make for dinner and he said "something with cheese and chicken in the crockpot". Since we were out all day I figured that was a great suggestion. So I found something on my beloved Pinterest and whipped it up. It was delicious, but I'm not that big of a cheese fan so I made some Chow Mein for my sister and I. It was quite delicious, and super easy to make!

Last Minute Father's Day Gifts: Paper Source

Our local "Mommy Group", The Mommy Spot, featured our new Paper Source the other day on an awesome app called Periscope. This awesome app allows you to host live from wherever you are, and alerts the person watching when they go live. I think it's a great app that we are going to hear more about. Anyways, when I went yesterday afternoon to Hyde Park to go to the splash pad, I couldn't help but stop in to take a look at the beauty of it all. Literally, craft paper for days...Love it! Below are 5 last minute Father's Day gifts for the dads in your life!

Finally Friday!!

 I confess that I had some good news and bad news all in one day. For about 30 minutes I let the bad news boil inside me, I let my mind consume it. It was absolutely terrible. Then I thought to myself why am I letting this bother me, I just had a wonderful day all for one 3 minute phone call to almost ruin it. 

I confess that I am excited for Father's Day this weekend. My husband deserves a day that we acknowledge him. He works so hard, and I can't wait to spend this weekend with him. When Bennett woke up this morning, my hubby was already gone. When I put him in the bed with me he started crying, I don't think he was expecting him to be gone already. We are going to visit him at work today so that will be a nice treat for us all. 

I confess I can't wait to go to our outdoor shopping area today with cute boutiques and a kids playground and splash pad. I've been wanting to go, but today just seems like a good day since the new Paper Source opened up down there today!

I confess I am super excited for a weekend getaway with my Hubby for our anniversary next week. It's the first time we are leaving Bennett for an overnight trip. I am excited for him to spend lots of time with his Grandma and Pop Pop since they have been gone for a month and a half.

I confess I found a really cute wooden sensory table that I want my dad to build for Bennett. I'm hoping to have it by his birthday!

Favorite Things: Pandora

I love listening to music, if you come to my house at any given time there will probably be music on in at least 1 of the rooms in my house. It's nice that we are able to stream it from our smart tv, blueray player, or our Apple TV. I do pay for Pandora One, but am only paying $3.99 a month. I have paid since I was teaching third grade, because a random Burger King commercial during a test makes for a lot of laughter. In the end I save a ton of money because the variety of music I listen to is great, and who wants to get up and change albums all the time? Pandora does that work for me!

I love the Laurie Berkner station because those songs on there are so catchy and not your typical Nursery Rhyme songs. Barney was chosen over Sesame Street because I have no idea what any of the songs are on Sesame Street, and Barney songs are the typical Nursery Rhyme songs. Baby Einstein has some great songs on it, as does Veggie Tales...either of these stations will have the same type of songs on them. Which ever you choose generally has more of that artist. The final choice is Rockabye Baby, this is one Artist that I do have A LOT of downloaded tracks from my time teaching preschool. I use this for when we are driving and Bennett's need to calm down, or if we are visiting someone and need some on the go lullaby music. 

Covenant Worship is one of my all time favorite worship groups,  I generally play them in the living room in the morning when Bennett is in his playroom. I love starting my day with them! For when I am feeling a throwback, *NSync is thrown on. My other go to stations are Today's Hits and Maroon 5, both have completely different music on them. For the evening, or anytime we have guests over you can't go wrong with Michael Buble
