Menu Plan Monday: Oatmeal


Ya'll don't hate me I'm a pregnant woman who loves all things pumpkin (even when I'm not pregnant.) Seriously, since the first of the month I've been craving it in my life. I woke up this morning wanting some oatmeal--and guess what? Yep, Pumpkin Pie Oatmeal was the chosen one. First of all, for me to crave oatmeal is one thing--to stand at a stove and make it at 6:45AM is another thing to be proud of! 

We are really busy this week so I'm not meal planning for the next 2 weeks. Instead I am giving you some delicious oatmeal recipes I do use when I make oatmeal. Including this new Pumpkin Pie Oatmeal that I mixed up today. 


What You Need:

1/2 Cup Oatmeal
3/4 Cup Almond Milk or Regular Milk
1/8 teaspoon of Pumpkin Pie Spice
1/2 teaspoon of Vanilla Extract
1 Tablespoon of Pumpkin Puree
sprinkle of brown sugar 
sprinkle of granola or pecans

1. Mix oatmeal and milk together in a small saucepan over medium heat. 
2. Let simmer for about 3 minutes, or desired thickness.
3. Stir in Pumpkin Pie Spice, Vanilla, and Pumpkin Puree. 
4. Sprinkle with brown sugar and granola. Enjoy!

Finally Friday!


I confess I'm pretty excited to see the walls up on the house. Before they put the walls up, it was just a giant piece of slab that I could never figure out which room was what. It's finally coming together, far from done--but at least I have an idea of what's going on now.


I confess I need for it to be September 1st so I can celebrate all things pumpkin! I'm loving this meme, because it's so the truth. Even though I've definitely cheated and purchased Starbucks Pumpkin Cafe Latte K-cups and Noosa Pumpkin Yogurt--I need for it to be available in my iced coffee at Starbucks ASAP.


I confess I actually am making my pumpkin chili this week for a contributing blog. I blog over at She Is {Blank Space} and will be featuring my delicious Pumpkin Chili over there sometime in the next week or so. I'm actually attempting to do a video, so this should be interesting. 


I confess I have some awesome reviews and giveaways coming up, you won't want to miss. I was sent this beautiful robe from Pinkblush, some awesome cups from Puj, and a couple other things that I can't wait to show you. 

I confess I've been busy picking out stone, lighting, and flooring this week, I literally spent all day Tuesday looking at flooring while Bennett was at school. It was honestly pretty nice to just walk around a flooring store with a Starbucks iced coffee.

Menu Plan Monday


I missed meal planning last week. We had an extremely busy week and I don't think I made dinner twice. Unless heating up pizza in the microwave counts? We had a ton of leftovers from Bennett's birthday and that's what we munched on the whole week. We eventually had to stop eating pizza and spaghetti though. We went to this lovely restaurant on Saturday night with some friends and it was absolutely delicious, and last night we had some good ol Boston Market
We were super excited to find these at our local Target. Seriously they are delicious!


I've been struggling with migraines. Seriously, they are back guys. I am trying to up the magnesium in my diet to see if maybe that possibly helps--it has to. I'm over these migraines and I've only had them about a week now. We have my husband's cousins in town this week so this menu plan is easy and feeds a lot of people. Oh, and those brownies? Sweet Potato Brownies! I'm pretty excited to try.

Bennett--2 Years Old


Weight/Length: 30 lbs. 36.75"

DiapersSize 5 during the day and 6 at night 

Clothing: He's wearing 18/24 months in shorts, with some 2T shorts as well. He's just really long and lean so his waist is pretty skinny. All of his shirts are 2T. He wears size 7 shoe--my favorites for him right now are his See Kai Run shoes, Sperry's, and his Gap like Native shoes. 

Favorite Things: Cars, trucks, dinosaurs, sand table, construction trucks, legos 


Likesplaying with his legos, going on walks, jumping in puddles, playing in the sandbox at school, watching his favorite shows (Daniel Tiger and Mickey), and playing with all of his family members, swimming

Sleep: Bennett has been an amazing sleeper since about 10 months. He all of the sudden started sleeping through the night and never turned back. We lay him down about 8:00PM and he usually wakes around 7:30AM but I get him out of bed around 8:00AM. He naps from about 1:30-4, but it's slowly changing to a little bit shorter. I still put him in bed at 1, but it sometimes takes him a little while to fall asleep. 

Eating: This boy is seriously such an eater. I don't think I have ever run into an issue with him being picky--yet. He loves salad that's for sure and often asks for it when we are out to dinner. He loves going to Sweet Tomatoes and inhaling any and all veggies at the salad bar. I'm definitely not complaining!


Health: We had a long journey of ear infections this past year when he started school. Seriously, we're talking August-March full of ear infections. He finally got tubes put in and has been doing fine ever since he passed his last infection. 

Favorite Books:
His Sesame Street collection of books. We always have to read at least two before he goes to bed. He loves finding the hidden dog on each page. I just recently purchased a Look and Find book but he's still getting the hang of that one. 

Vacations: Atlanta (lots to visit hubs when he was working), Orlando, Pennsylvania, Ohio, North Carolina, Anna Maria, St. Augustine

Milestones
Talking- He's a chatter box this little one is. He is talking in 3/4 word sentences, and copies anything you say. SO be careful. 
Swimming- We started swim classes a couple weeks ago and this boy is doing so amazing. He loves swimming anyways so the swim lessons just make it that much better. 
School- We started school at an amazing preschool 2 days a week, he stays for lunch and then comes home and naps. I enjoy the quiet time and I know I will love it when Carson arrives. 
Big boy bed- We randomly started him in a big boy bed when the air went out in his room, so we told him he would be sleeping upstairs and we haven't looked back. 

Mama Thoughts:
I can't believe my boy is already two. Although I may still call him my baby it won't be long until my baby is actually a big brother. We are cherishing these sweet moments with him before Carson gets here. He is such a lover and I know he will be a wonderful brother. I can't wait to see how much he grows this year.

Almond Butter Cereal Cookies

You know the saying you can't eat just one? That's how it is when you give a toddler a taste of their first real cookie. Not those healthy veggie cookies you've been giving them, but a real cookie. After breakfast one day my son asked for a cookie I looked at him like he had two heads. Then I got an idea. Why can't we have cookies for breakfasts? 

I wanted to make something my son could take to school, and majority of schools don't allow peanut butter if there is an allergy. I also grabbed Kashi Honey Toasted Oat Cereal, I'm not a huge cereal eater but my husband even loves this stuff--that's actually saying something. You could easily substitute any other cereal, but hey they have less sugar then some of the other honey oat cereals. 

Almond Butter Cereal Cookies

  • 1 Cup Almond Butter
  • 3/4 Cup Honey
  • 1 tsp of Vanilla
  • 4 Cups of Kashi Honey Toasted Oat Cereal
Almond Butter Cereal Cookies


1 Cup Almond Butter
3/4 Cup Honey
1 tsp of Vanilla
4 Cups of Kashi Honey Toasted Oat Cereal

1. Pour almond butter, honey, and vanilla in a microwave safe bowl. Heat for 30 seconds, stir and then replace for another 20 seconds. Stir to combine.

2. Pour the mixture over the honey toasted oat cereal and stir until coated.

3. Spoon out cookie sized balls on to a tray lined with wax paper, and let sit for at least 3 hours until solid. 

4. Store in an airtight container. 


I promise your child will thank these are cookies--they are delicious, and make a great breakfast on the go!

Menu Plan Monday: Quick Breakfast


Welcome back to the school year, sports, and busy schedules. There are many nights as a mom that I feel like just grabbing dinner out because it's easier. It's therapy for me to cook a meal though, so I do it anyways. I challenge you to cook at least 2 home cooked meals this week. Think of the money you are saving, maybe even take that money and put towards a vacation. Involve the kids, cook while they're doing their homework or relaxing at the end of the day. 

This week I'm going to try for two meals home cooked--but I know my hubs will be busy this week so it might not even be fathomable. Basically, I don't cook for one and a half. It's just a waste of time and to be honest my hips hurt to bad for it. So this week I'm going to leave you with three breakfast ideas that are quick and easy for you or the kiddos!

Finally Friday


I confess I am very happy when I dropped Bennett off and he was ready to say goodbye. It's a great feeling knowing your son feels safe where he is, especially on the first day of school. It was a great day, and he had a blast. He sat for his full morning meeting, story time, and even sat in the big chairs for snack and lunch. I'm so excited about all he will learn this year! 


I confess I was very productive when he went to school yesterday. I started monthly photo books for him when he was born, and well it kinda looks like we didn't have a child after 9 months. My goal while he is at school is to complete the photo books before the baby is born in December. I actually got 10, 11, and 12 months done. We're moving somewhere!

I confess that my hips hurt at 23 weeks. I swear this baby is way lower than Bennett ever was, but hey if that's the only thing that's wrong I'll go with it.

I confess my boy turns 2 this weekend! We have a special weekend of bowling, birthday party, and a spaghetti dinner plan. I want to make this weekend so special for him--so here we go!

I confess I got maternity jeans from Gap for $.75. To be fair my mom picked them up for me when she was out one day. They just so happened to be  my size, and on super clearance at the only Gap in town. She picked me up a black pair as well which will be perfect for fall! If you are looking for jeans (although they won't be this cheap) go to Gap!
