Finally Friday

It's finally Friday! I've had a fantastic week filled with tons of fun. Let's start the confessions because I have quite a few to make. 

I confess I am more then excited to leave this afternoon for a girls weekend. My hubs and Bennett get to have a special guys weekend--while I'm sipping a lemonade on the beach under a cabana. I'll take it. I chose a good book--and charged up my Kindle. Bring it on Bachelorette Party!

I confess I am in love with a lip gloss from Mac that is not sold in stores and only in those special packs. It's very disappointing. I need this in my life again. Does anyone know where you find lipgloss that may be a similar color? 


I confess I went shopping crazy on Gap the other day. It was 50% off of sale items--were talking I spent no more then $8 on one item (I bought way more than these 2 items). If you know me I love me some Gap, and this sale couldn't be passed!

I confess I also attacked a Pottery Barn sale--except I had to go to the actual store as the shipping was almost as much as I was getting off on the product. Crazy talk. But when I went to the store, I experienced something I have never experienced before...

I confess I inhaled cotton candy. Literally, it didn't last long. I'm a strong lover of cotton candy and the last time we went to see the Disney on Ice show the line was so long I passed on it. I was so upset the rest of the night weekend. It's an intense love, except this time I'm thinking my brewing baby is the one that is making me hungry for this. True Story.

Peach Mango Teriyaki Chicken

Craving a delicious meal without all the mess? Here it is. A sweet chicken dish with a side of coconut rice. There will be no leftovers so fill your plate--or someone else will. 

This pregnancy I've literally been obsessed with peaches. I always order 5 from Shipt when I get my groceries and I always have a bag of frozen peaches in my freezer. A couple weeks ago I had nothing to make for dinner--and it was one of those I'm wearing yoga pants and not going anywhere days. So I grabbed peaches, mangos, and teriyaki and threw it in the crock pot hoping for the best!

When I handed Bennett his plate he quickly ate all the chicken and luckily I had a little more to offer him as he wanted seconds. I had yet to taste it, as he had eaten his dinner a little early. I quickly grabbed a plate and ate it almost as fast as he had inhaled his. This is such an amazing, quick dish--you will make again and again. 

I decided to whip up some Coconut Rice with the chicken this time--but it would go great with some fried rice or a couscous. The rice recipe I used is from Food Network, I did however change it up a bit and make the serving smaller. 

Peach Mango Teriyaki Chicken

1 Cup of Frozen Peaches
1/2 Cup of Frozen Mangoes
1 cup of Teriyaki Sauce
1.5 lbs. of Chicken Breasts

1. Place peaches and mangoes in the bottom of the crockpot.
2. Put chicken breasts on top of the fruit, and pour the teriyaki sauce on top. 
3. Cook on low for 3 hours (if frozen cook on high for 4 hours). 
4. When the chicken is finished, put chicken on the plate and shred with 2 forks. 
5. Serve with coconut rice.

I'm super excited that the week that I run away go away for a bachelorette party. I am really proud of myself that I actually have planned out the entire week (with the help from Plated)--and I have a new recipe coming to you. I'm putting a spin on the Peach Mango Chicken and making it into a crock pot meal for a day we are busy. 

Another thing I'm continuing to love this week are overnight oats. I have been making one each night for my husband in the morning. I end up going ahead and making myself one as well. The ones I made this week will be featured on one of my favorite blogs She Is {Blank Space} sometime in the coming weeks. Keep a lookout because they are easy for when school starts back up and you're trying to get the kids out the door quickly!

Finally Friday!

1. I confess I can't believe I'm already to the half way point for this pregnancy. I'm continuing to feel amazing--which is so strange. I can deal with the occasional bouts of reflux if that means I can function in the real world. Check instagram later for a bump pic. 

2. I confess I am super excited for Bennett to start school in just a couple weeks. We had a play date with two girls that will be in the same class on the same days as him, and they all had a blast. I enjoyed meeting both of their mom's, and it will be nice knowing some people in the class. I'll be making this cute shirt sometime this week for the first day.  

3. I confess I am in love with my JuJuBe bag. I got in a week ago on the Nordstrom sale and I can't wait to pack it--it's a little soon and it'd be a little creepy if I went ahead and packed it. So I'll wait. It will be here soon!
4. I confess I have literally nothing to wear to a shower I am going to on Sunday. It's so hard trying to find something to wear when pregnant. I do have a cute dress for the wedding in October--so I guess that's one accomplishment. Right? Do you have any ideas on quick cute dresses? I'm loving this dress from PinkBlush--but I didn't plan in time, maybe I'll run to the mall tonight and hope to get something!

5. I confess next weekend I have a bachelorette party at a beach resort. I will be away for 2 nights. 2 Nights by myself--I'm not even caring that I won't have a yummy drink in hand. I'll grab a lemonade or 2 and head to the beach with 1 bag in hand and a book. It will be wonderful! I'm thinking a Emily Giffin book--but what you been reading?

Brown Sugar (Garlic) Noodles

So my love for Plated is real ya'll. The food is so excellent. Except one thing--my husband can't eat doesn't like Arugula. So every time it is offered I end up making something else to go with it. 

Well I won't lie, after my vacation last week I didn't really buy anything else that I could whip up in a jiffy to go as a side with Maple Pork and Peaches. I searched really quick for something with a splash of sweetness--and finally after much searching I found it! 

The simplest recipe in all of Pinterest land--I even made it again for lunch. I can now say this Baby Carson is craving them now. 

I used macaroni in this recipe as that was all I had on hand--but you could use any type of pasta. You could also add any type of protein or veggies to the noodles, I just had my meal already prepped and ready to eat. 

Garlic Noodles (Recipe adapted from Damn Delicious)

1/2 Lb Pasta (any kind tastes delicious)
3 Tablespoons of Butter
4 cloves Garlic, minced
1/2 bunch of green onions (I omitted as I didn't have any on hand) 
1/4 cup Reduced Sodium Soy Sauce9

2 tablespoons brown sugar
1 teaspoon of Sesame Oil

1. Cook the pasta according to the box. 
2. Whisk together the Soy Sauce, Brown Sugar, and Sesame Oil.
3. Melt butter over medium low heat, add garlic and green onions and saute for 2/3 minutes. 
4. Pour butter mixture over noodles, stir to coat. 
5. Pour brown sugar sauce over noodles. 
6. Serve hot--even though I'm sure this would be great as an asian pasta salad!

We are finally back from vacation(s). I'm pretty sure I traveled way more this summer then the past couple years. I am so glad to be home and get back to my regular scheduled activities. We have swim class starting this week for my little fish, and I have a 20 week sono (half way there!). There is a fun Mom's Night Out planned for dinner and busy bags (my busy bag will be on the blog this week!) It will be a very busy week ending the week with a birthday party on Saturday and a Bridal Shower on Sunday. We are ready for a staycation for the rest of the weeks leading up to school starting for the little guy. 

Tuesday and Friday are dishes that I found that are similar to the ones I was sent via Plated. I have tried other services like Plated and was not happy with the food I was sent. I am loving Plated--if you want to give it a try follow this link for a free dinner for two.

Grab your wallets quick! The early access Nordstrom anniversary sale has started. If you don't have a Nordstrom credit and debit card you can sign up before purchasing your items. The anniversary sale opens for everyone on July 22nd, there is some amazing stuff...I picked up the Ju-Ju-Be BFF and the Aden and Anais swaddles. I had wanted to buy the diaper bag a couple weeks ago but held off in hopes it would pop up on the anniversary sale--and I always purchase the swaddles every year. 

About everything else--We have a similar activity gym and we used it for a very long time! We kept it for baby Carson on the way. I am pretty tempted to purchase this convertible car seat for Carson--it's a great price and has an awesome sun canopy which you don't see on the convertible car seats. We have the infant Maxi Cosi, but we only used it for 4 months--but it's so nice for those first few months. We have an Ergo and LOVE it. I'm so excited to baby wear again with Carson, if you need one this is a great price! Last but not least, the belly bandit for you. This is amazing to help your belly get back to what it was before baby. I really loved it, and I think you will too!

Beachin' with Kids

One thing my family loves is going to the beach. Trust me when I say it's totally different when you go with kids versus going with you and your friends sans kiddos. But listen--in a few weeks I get to go to the beach for a bachelorette party and it will be me and my Lilly cooler that will be it. Anyways, there are some essentials you must pack when going with kiddos, and this is the list I compiled to help you when packing for your next beach trip! 

Tips for your beach trip:

--Apply sunscreen before going out to the beach, chasing a child around the beach isn't going to be fun. Just get it over with before you leave the house or hotel. 

--You need to reapply sunscreen throughout the day. Your child will have sand on them, that's where the baby powder comes in handy. Use some baby powder to help get the sand off your child before reapplying the sunscreen. 

--This backpack chair is amazing, and usually there is a pocket and I slip the kids chair in the back so I can easily carry that one too. 

--If you only have your two hands, you will need something to push the stuff down to the beach with. I swear by my Bob, it's amazing and I probaby will never get rid of it. They also have amazing beach carts, but if you have a Bob just use it, you won't regret it.

Homemade Lemonade

In Florida it's basically inevitable to not be pregnant in the summer time. I mean really it's hot a good chunk of the year and at some point no matter what time of year you get pregnant in it will be hot! Luckily, I'm not as large as a house almost due, so there's a plus to that. I can still bend over(ish), pick my almost two year old up, and not get extremely tired after an hour of being awake. One thing I have learned is that no matter how many weeks you are, you will get swollen if you don't have enough fluids. I hate the feeling of my feet and calves being swollen. So water it is, but water can get old after a while even if you spritz some lime. 

I'm here to tell you that there are some yummy drinks that your alcohol drinking, non-pregnant friends are eyeing up while your sipping away. Lemonade. I'm not just talking plain ol' lemonade--flavored lemonade with fresh fruit and sprigs of mint and sparkling water. Seriously, you will forget that you aren't over at the bar, and plus you will save money drinking these mommy mocktails! 

I prefer to make my own lemonade but if you want to purchase store bought then go ahead! Below is how I've always put my lemonade together. 

1 1/2 cups Lemon Juice 
5 cups of water
1 to 1 1/4 cups of sugar (depending on how sweet you like it)

One note about the sugar--I like to make it into a simple syrup before hand so that it dissolves right away in your lemonade instead of granules sitting in the bottom of your pitcher. That's easy to make--just mix equal parts liquid and sugar. So if you are using 1 cup of sugar use 1 cup of water (I like to just go ahead and use some of the lemonade I made.) If you use this combo it will result in about 1 1/2 cups which would be perfect! 

Now on to the good stuff...

Strawberry Mint Lemonade

5 strawberries
few sprigs of mint
glass of lemonade

Muddle your fruit and mint with a couple splashes of lemonade. You can choose to strain the mixture once you are done or keep it with all the delicious strawberry bits, totally your call! Pour into a cup of ice and pour some more lemonade over it. 

Peach Pomegranate Lemonade 

Half a Peach
1 Tablespoon of pomegranate seeds

Muddle the peaches and pomegranate with a few splashes of lemonade. I pour directly over ice and top with more lemonade, but you can always strain the juice.

Homemade Spaghettios

I have had an amazing pregnancy thus far. It has been completely different from Bennett's--besides being tired the first trimester, everything has been great. One thing for sure is I have cravings--you could say good ol' comfort food is where its at. Mac and Cheese, Raviolis, mashed potatoes, and the latest? Spaghettios

As easy as it would be to just grab it in the can at Target or while I'm Shipting, I just can't get myself to buy any of the prepackaged stuff when it's so easy to make triple the amount at home and know exactly what's going in it! I couldn't find the exact "spaghettios" pasta, but we always have ditalini in the pantry. If you know where to find the pasta let me know, but you really could use any small shaped pasta! 

Homemade Spaghettios

Adapted from Fake Ginger

29 ounce can tomato sauce
3 cups water
1 cup milk
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1/4 teaspoon onion powder
pinch of paprika
2 tablespoons of sugar or honey
8 ounces small pasta

1. Bring tomato sauce, water, and milk to a boil. 

2. Add cheese, garlic powder, onion powder, paprika, and sugar. Stir until all cheese is melted. 

3. Pour the pasta into the sauce and cook for 20 minutes, making sure to stir occasionally to make sure the pasta isn't sticking.
