Christmas Gifts for Toddlers

Menu Plan What? When my hubby is working late or gone menu planning gets put on the back burner and I tend to just eat whatever is in my pantry or fridge. Thus bringing you my favorite gifts for Toddlers. I'm hoping to get some other lists up over the next few weeks for your husband, kids, and even yourself. 

We always do Christmas at my parents house since my siblings are still young. This year though everyone is coming to our house for present opening time, I adore opening presents on Christmas and I am so excited that Bennett will be able to participate this year. We found some amazing deals on a couple items, and he is going to love what we got for him. 



With Christmas on my mind, we had our Christmas pictures taken this last week on Bayshore Blvd with our favorite photographer Kristen Marie who has been with us since our engagement!

Menu Plan Monday

M- Slow Cooker Lettuce Wraps T-Bang Bang Pasta 
W-Slow Cooker Chicken Pot Pie Th- Three Cheese White Pizza 
Sat or Sun-Hash Brown Potato Soup

My husband has been out of town the last 2 weeks, which means I haven't been meal planning...which means I may have put on a few pounds. I have actually lost 10 pounds since starting school at the beginning of September. That's awesome considering those last 10 pounds would not come off from pregnancy! Since my hubby is home this week, I have decided to try and make something every day since he eats out a lot when he is out of town. We started the week with some potato soup, and are finishing it up with an early Thanksgiving Dinner with some friends this weekend. I hope you enjoy the recipes I have pulled.

Crockpot Pumpkin Chili


Honestly before Sunday, I had never even heard of pumpkin chili. I have never been a huge fan of chili, but just recently I have been craving some. Last week I made a delicious "Steak and Shake Copycat Chili" which created a love for chili. The other day a friend texted me and asked if I had a recipe for Pumpkin Chili. I immediately searched Pinterest. I found 2 that I really liked, but couldn't quite settle on one. I ended up pulling from 3 different recipes to make this, and boy was it delicious! This friend also opened my eyes to the wonders of cornbread waffles. I don't know where I have been living for the past 26 years, but I'm pretty sure those need to be made ASAP. I hope you love this chili as much as my family does!

2T of Olive Oil
2 cloves of garlic
1 sweet onion
1.3 lbs of ground turkey
7 oz of chicken maple sausage chopped—I used patties
8 oz Pure Pumpkin
2 cans of Kidney Beans
1 can 26 ounces of tomato sauce
1 can 27 ounces of diced tomatoes
2T chili powder 
1/2 tsp cumin
2 tsp of brown sugar
salt and pepper to taste

Place olive oil in a pan on medium heat, once hot place onions and garlic and saute for 2 minutes. Brown the turkey and sausage. Add the rest of the ingredients to your crock pot. After the turkey and sausage are finished, drain and place in crock pot. Stir together and cook on High for 4 hours. I served it over top a delicious cornbread waffle!

Pumpkin Banana Smoothies

I regret to inform you that Menu Plan Monday will not be occurring this week has not occurred in weeks. I just got back from a wonderful vacation in St.Augustine with my mom and siblings. It was a much needed relaxing weekend, while my hubby played softball in Ohio. I barely touched my computer this week (or the last few weeks--sorry), so starting this week I plan to get back on track. Many confessions need to be made, as well as lots of new favorites. 


I only thought it was fitting that I share a Pumpkin recipe on Labor Day. Somehow, I was able to get a pumpkin spice latte on Saturday? Has anyone else had one? I had no idea they were out yet! It was delicious. After seeing some mom friends post about a new pumpkin banana chobani yogurt for little ones I decided I would make my own. I hardly make it to the store anymore (thank you Shipt), and am all about making homemade vs. store bought. These go straight in the freezer, then to the lunch box, they defrost in about 3 hours--just in time for snack! This makes for a great extra ice pack as well!


Pumpkin Banana Smoothie

1 Cup Pure Pumpkin
2 Bananas
1 1/2 Cups of Plain Whole Milk Yogurt
Sprinkle of Pumpkin Pie Spice

Mix everything in a blender, blend and pour into pouches. Freeze and throw into lunchbox.

Finally Friday!


On this Friday I am confessing about all things classroom, working, and dinner! What are you confessing this week? 


I confess that I am really excited to start school next week. I am also excited that my sweet Bennett will be starting as well. We had meet the teacher last night, so he got to meet his teacher and the 4 little ones in his class.  As for me, I am pretty sure that Meet the Teacher only gets easier every year. I wasn't stressed when pots and pans were thrown about, or when I couldn't talk to everyone at once. 
I confess that I would absolutely love an embroidery machine. I have so much stuff that I want to monogram, or at least try to monogram. ;) I will have to look for one on one of the swap shops, or even new--depending on which brand I go with. 


Portillos Copy Cat Salad
I confess I don't even remember really making dinner this week.--BAD. Not a good way to start the school year. I did however find a great "salad" recipe from Everyday Happiness, that I will just have to try this weekend. It sounds delicious. I'll probably hold the lettuce though and add when we eat, as I am sure it will last us a couple days. 

This Dress
I confess I actually went shopping on Monday night. I always love a new dress for Meet the Teacher night. Something fresh is always nice to have when you meet the kiddos. 
I confess I really need some ideas for lunches for myself. I prefer cold lunches so I don't have to heat them up in the microwave. Maybe I will be adventurous and try to blog more this week with some lunch ideas that I find.

Last week was so busy. I came down with Bronchitis and Bennett was getting over an ear infection. My husband was also out of town a lot and at the end of the day blogging was put to the back burner. This week though, should be a little semi normal. I start back at work on Wednesday for preplanning. I'm excited to get a schedule together, and start the school year. The Lemon Butter Chicken that is planned for Saturday/Sunday is delicious. I am definitely making this one again!
