Packing: Baby's Hospital Bag

I'm in the home stretch--almost there. This is actually the part that bothers me the most though honestly. I'm such a planner and to have no idea when my child is coming drives me a little crazy. I've done everything there is to get ready, packed my bag, prepared freezer meals, and the last thing to do was pack sweet Carson's bag. 

A couple weeks ago I had these pictures done by the wonderful Alison Winterroth. She needed a model for some new dresses and backdrops, and I basically yelled hey I'm your girl! I loved these shots, and they will look gorgeous on a canvas hung up around the new house.

Menu Planning: Freezer Meals

As you can see I didn't post my menu plan on Monday. I am exhausted, and really getting up and cooking meals is not on the top of my things to do. To prepare for Carson to arrive in the next couple of weeks, I have actually frozen the meals from Home Chef into separate bags so that when the time comes for me to cook again--everything will already be prepped and ready to go. 

I am pretty lucky when it comes to the first couple weeks, as my mom set up a meal delivery for every day for 2 weeks. It's an awesome website that people can sign up on. It allows them to meet the baby, and you still get home cooked meals. People really love it, and you don't have an influx of people asking when they can come over to meet your new bundle--it's already planned for you. My Type A loves it.

Packing: Mom's Hospital Bag

I can not believe that I have 5 weeks until my due date. Pregnancy is just so long, and the weeks leading up to D-Day are just the longest ones. The other night I was having Braxton Hicks that would just not stop, which reminded me that I didn't have a bag packed. The next day, you bet I packed that bag and it's ready to go.

Cauliflower Chowder

The perfect low-carb soup for a crisp fall day. 

Since fall arrived made it's debut a couple weekends ago, I have been obsessed with making soups, chili, and warm comfort food. I'm a lover of potato soup--but when I saw this lovely creation I decided this needed to be made. As a huge fan of broccoli cheese soup, I had no doubt using cauliflower in a soup would be equally as delicious. 

On top of sneaking in all the veggies that my son would have no idea he was eating, I added in greek yogurt at the end. To offset all the healthy stuff, you know I had to cook up some bacon and crumble that goodness on top with some cheddar cheese. I am convinced that if I hadn't told my husband that this soup was cauliflower he would have no idea what he was eating. Seriously the whole family will love this--I promise.

Menu Plan Monday #36

Happy Monday my friends! I hope you all had a fantastic weekend. We enjoyed a lovely wedding on Friday night, set trusses on Saturday and then went off to Disney for the night for fireworks. One last vacation before our little man arrives in 6 short weeks. We decided to include Bennett in on this Baby Moon. I found it very important to have him involved in this vacation. One last trip with his mom and dad before he shares us forever with his brother. It's hard to fathom what life will be like once Carson is born, but I know our lives will be changed and our hearts will grow that much more. 

This week I have a delicious Cauliflower Chowder that I made my own--I did go off of this recipe, but will be posting mine tomorrow. Be on the lookout--it was delicious, and you would have no idea that it was made out of lots of cauliflower. What are you making this week?
